Perfect Recipes For Summer Picnics

When it comes to fun in the sun, nothing quite beats a summer picnic. Kildare is full of wonderful spots perfect for a picnic, and there are plenty of great recipes you can try out. We’ve made a list of some of our favourite picnic recipes below, so try them out and lets us know how you get on next time you visit Zest!

Sausage Rolls

Homemade sausage rolls are easy to make and a sure-fire hit with everyone. Simply take a packet of your favourite sausages, strip the skin and apply some all-butter puff pastry. Delicious and easy!

Jelly Jars

A yummy desert and a great way to recycle old jam jars! Clean out some jam jars and add thin slices of fruit and a generous helping of jelly. Once the jelly has set add a layer of cream and some chocolate sprinkles. Don’t forget to close the lids when transporting!

Pink Lemonade

Super simple and incredibly tasty, this is the perfect thirst quencher for the (hopefully) hot summer weather! Use a peeler to pare the zest from some lemons, and juice the lemons. Mix the juice, zest, sugar and some raspberries with 1.2 litres of boiling water. Cool, sieve and add some extra sugar and raspberries for taste.

Summer Potato Salad

A yummy salad loved by all that only takes minutes to make. Boil some potatoes in salted water until soft. Mix some garlic, onion and a little pesto together to make a paste, and add some mayonnaise, olive oil, Parmesan and lemon juice. Add the potatoes and a pinch of salt and pepper for seasoning.

Sandwiches

Sandwiches are a staple at picnics, but we advise avoiding soggy and gooey ingredients. Instead try some of the following tasty fillings:

-       Ham, buffalo mozzarella, semi-sundried tomatoes and pesto is healthy and delicious

-       Bacon, brie and sliced apple really satisfies taste buds

-       Veggie hummus, olive tapenade, cucumber and grated carrot is perfect for attending vegetarians

Chicken Drumsticks

If you have time to spare the night before the outing, marinade some chicken drumsticks with sesame, soya sauce and honey or curried yoghurt. These are easily packed and you don’t need utensils to enjoy them.

Don’t forget to bring a bin bag for rubbish, and for the rare occasion of sunny weather you’ll need your sunblock. Bring a pack of wipes for sticky fingers and faces.
